Tacos Board Recipe

Many of you have made my Easy Taco Recipe Dinner Board, this Easy Pork Carnitas Taco Board, or this Taco Tuesday Chicken Bowl Taco Board. Don’t forget my Crunchy Fish Sticks Taco Board!

Today I’m sharing a vegetarian or vegan option. Or, you can make your own Quinoa Taco Meat, too!

Who do you invite?

Someone said the other day that they can’t wait to make a board, but they don’t know who to invite?

I said, invite your neighbors!

One of the biggest barriers of hosting for many is who to invite!

It takes courage, especially if you don’t do it often, as there’s always the worry that they won’t want to come (but who turns down a dinner invite, really?) Or, what will you cook? Especially with so many diets these days.

Remember friends, the more you entertain, the easier it gets!

So be “prepared” when your vegan friends are coming for dinner and save this awesome recipe and shopping list so you can make a quick stop at the store, and have dinner on the table in no time.

What is a vegan pita taco?

We found these “Free” pita breads in the freezer section at Fred Meyer (Kroger), and then mixed our own Gardein meatless ground crumbs with a little tomato paste and favorite Mexican spices!

So we made tacos with pita bread instead of tortillas, with all the delicious toppings!

SOOOOO GOOD!

What ingredients do I need for a vegan taco board?

  • We found these “B Free” pita breads in the freezer section at Fred Meyer (Kroger)*
  • Gardein meatless ground crumbs (add your favorite Mexican spices)
  • Vegan shredded cheese
  • Shredded lettuce
  • HOPE Spicy Avocado Hummus
  • Black beans and olives
  • Corn tortilla chips
  • Cilantro
  • Tomatoes

How to prepare the taco board

  1. On a prepared board, leave room in the center for the bowl of meat.
  2. Take the meatless ground crumbs and add tomato sauce and spices. Salt and pepper to taste!
  3. Cut pitas in half and arrange around the outside.
  4. Fill small bowls with cheese, sauces, beans, olives, pico de gallo, and lettuces. Lay on the board.
  5. Place the warm meat in the center. Fill in open areas with chips.

Ingredients
 

  • 2 pkgs Stone Baked Pita Bread, cut in half (we buy BFree brand)*
  • 4 cups Gardein meatless ground crumbs
  • 3 Tbsp tomate paste
  • 1/2 tsp garlic powder
  • 1 tsp cumin
  • 1 7 oz pkg Daiya shredded, vegan pepper jack cheese
  • 2 cups shredded lettuce
  • 8 oz HOPE Spicy Avocado Hummus
  • Black beans, drained
  • Black olives, drained and sliced
  • Corn tortilla chips
  • Cilantro, chopped
  • Tomatoes, diced

Instructions
 

  • On a prepared board, leave room in the center for the bowl of meat.
  • Take the meatless ground crumbs and add tomato sauce and spices. Salt and pepper to taste!
  • Cut pitas in half and arrange around the outside.
  • Fill small bowls with cheese, sauces, beans, olives, pico de gallo, and lettuces. Lay on the board.
