Cooked rice, you can use brown rice or Spanish rice or Mexican rice
Green and red onions
Corn salsa, from Trader Joe’s
Set it out, they will come!
Set out candles and napkins and sit down to eat and enjoy fellowship.
Dinner boards are casual, and everyone loves taco salad!

Don’t worry about the condition of your home. Honestly, when I’m invited to a dinner, my energy does not go to my surroundings and every detail. My energy goes to conversation, the people. The food is a great addition, because when you think about it … we’re sitting around a table, taking in the same ingredients and surroundings, verbally sharing so much about life.
This is soul.
Eating together is beautiful and “soulful.”
Setting out food on our tables and inviting people in, it becomes love in action.
I think it makes people feel more loved and convivial when it’s not a big plan, and a large dinner board is that.

Best Charcuterie Boards to Buy
I updated my list for the best charcuterie boards to buy, since Pier One has gone out of biz.
For this post I used the epic 28-inch Pier One round board (but it is no longer available). I will be updating “best charcuterie boards to buy” post as I find more boards (with a lip) that would work for hosting!
For now, I absolutely love the LeCreuset Tray (link is in the “best charcuterie boards too buy”) because it has a nice lip, it’s food safe, and EASY for entertaining.
Chicken Taco Bowl Board
- Chicken, cooked, we use rotisserie
- Cooked rice, you can use brown rice or Spanish rice or Mexican rice
- Red salsa
- Mexican cheese
- Green onion, finely chopped
- Red onion, finely chopped
- Sour cream
- Corn salsa, for Trader Joe’s
- Chopped cilantro
- Lime wedges
- Prepare a large bowl with shredded chicken and cooked brown rice (or use Mexican rice). Sprinkle with fresh chopped cilanrto. TIP: Prepare the bowl and keep warm until right before serving.
- In small bowls add the cheese, onions, sour cream, corn salsa, and all taco toppings for the taco bowl. Place on the board.
- Add lettuce and tomatoes around the bowl of rice and chicken.
- In open areas, add your favorite taco chips! Serve!
