The food is a great addition, because when you think about it … we’re sitting around a table, taking in the same ingredients and surroundings, verbally sharing so much about life.

All you need is:

  • Chicken (cooked, we use rotisserie), cooked rice (you can use brown rice or Spanish rice or Mexican rice), and then toppings.
  • Toppings like salsa, cheese, green and red onions, and olives.
  • Then add sour cream, corn salsa (yummy at Trader Joe’s), guac and chopped cilantro!
  • Don’t forget the shredded lettuce and corn chips.
  • Garnish with lime wedges.

Rememember it says it is “not food safe,” so you need to prepare the board by either laying down parchment paper under the food, or you can “season” it like we did.

How to season a Charcuterie Board

If a wood board says it “not food safe,” you can lightly sand it down with sand paper, and rub down with beeswax and mineral oil.

We used this butcher block and cutting board oil conditioner after we lightly sanded the board down.

Or, lay down parchment paper! Easy peasy!

Chicken Taco Bowl Board

Ingredients

  • Chicken cooked, we use rotisserie
  • Cooked rice you can use brown rice or Spanish rice or Mexican rice
  • Red salsa
  • Mexican cheese
  • Green onion finely chopped
  • Red onion finely chopped
  • Sour cream
  • Corn salsa for Trader Joe’s
  • Guacamole
  • Chopped cilantro
  • Lime wedges

Instructions

  • Prepare a large bowl with shredded chicken and cooked brown rice (or use Mexican rice). Sprinkle with fresh chopped cilanrto. TIP: Prepare the bowl and keep warm until right before serving.
  • In small bowls add the cheese, onions, sour cream, corn salsa, and all taco toppings for the taco bowl. Place on the board.
  • Add lettuce and tomatoes around the bowl of rice and chicken.
  • In open areas, add your favorite taco chips! Serve!
