Do you ever sign up or commit to something, and then you forget all about it?
Even with the iPhone reminder that popped up the day before, reminding me to make a breakfast casserole, I still got distracted and FORGOT.

and as I was out running with my friend, Kristi, I remembered. Like 1 1/2 hour before I was to take the food to the parish for a school function, and I panicked!
Usually I have everything I need to whip up … something … but this time I couldn’t really think of how I was going to get it done.
Kristi bailed me out with her stand-by-recipe. I love that girl!
I drove to her house after our run, grabbed some bacon and Bisquick, then headed back to my house and put a 9×13 casserole together for our senior Breakfast at school. Right into the oven …
Just in time, I grabbed my wood rack, because the pan was hot, and I covered it with foil. I ran out the door and drove rather quickly to get to the parish.
I arrived in time. Not late, but definitely not early.
Please tell me that you’re like me and forget things here and there …
What do you do when you’re in a pinch? Do you have a neighbor you can run to?
Recipe: Impossible Quiche Pie {ReluctantEntertainer.com}
Summary: Fast and easy recipe when you’re in a pinch and have a box of Bisquick. Makes a 9×13 pan.
Ingredients
- 4 cups milk
- 2 cups Bisquick
- 8 eggs
- 2 cups cheese
- 1 1/2 tsp. salt
- Pepper to taste
- Miscellaneous ingredients such as bacon, sausage, chiles, grates zucchini, tomatoes, mushrooms, green onions, red onions
Instructions
- Heat oven to 400. Spray a 9×13 pan with Pam. Blend above ingredients and pour over your choice of these ingredients: Bacon, sausage, chiles, grates zucchini, tomatoes, mushrooms, green onions, red onions … use your imagination.
- I sprinkled with cilantro because that is what I had. But basil is DELICIOUS, too.
- Bake for 40-45 minutes. It might be slightly jiggly in the center.

Has anyone tried this with a gluten-free baking mix? I’m thinking this would be an easy one to adapt. Yee haa! And yes, Sandy, I’ve forgotten things many times…just wish I had Kristi next door – both for a running buddy and a buddy brain! You are both blessed.

Love that one! I’ve also added a bit of lemon juice and zest to make it a lemony flavor.

Hi Sandy!
Oh how I laughed when I read your post. And I can relate. I don’t know if it’s age or what but I forget so much stuff these days! I think the problem is that our family has been so busy lately that some things just slip through the cracks. But I usually glance at my to do list at and then remember at the last minute…and am scrambling like you were the other day.
I have a small social circle of friends and we all help each other when things like this happen. I have a friend like yours, her name is Kristin, who is such a go-to-girl. She has all sorts of quick and easy recipes and is always ready to pitch in and help me out when I forget something. She is also one of those wonderful ladies who you and Sheila would just love. Kristin is always ready with a meal when someone needs it.
And I think she is a wonderful example for all of us. She has 4 young children and is a single parent but still manages to help out others while taking really great care of her kids!
She doesn’t try to be perfect or come over with perfect meals when you’re sick or in need. She comes with a smile, a hug, and simple meal – usually a one pot sort of dish, something that she has made for her family and doubled it – but it all makes you feel loved and cared for. I think she’s the best.

Right there with ya! We just got back in town from a college visit, I have a million things to do, need to finish reading my Bible study lesson, the house is a mess, and I just remembered tomorrow is our fellowship during our study and I need to make some type of baked good.

I am so lucky to have moved across the street from one of my closest friends. We are constantly borrowing eggs, yeast, a brown gravy packet(!)…..swapping childcare and having spur of the moment walks with our kiddos. It’s been the best gift! Maybe I’ll make this yummy quiche for her just to let her know she’s appreciated.
