We start celebrating the Fourth of July right after Father’s Day. The yard is in order, the weeds are pulled, flowers are in full bloom, and we bring out the red, white, and blue colors and dishes!

It’s fun to make several big summer meals (did I mention it’s also my husband’s birthday and my birthday in between? so we have a lot of celebrating to do!), and invite different groups of friends over for dinner.

And with berry season, you can’t go wrong with a fresh, juicy cobbler! We went to a wedding Sunday night this week in Jacksonville, and the bride and groom served Oregon Blackberry Cobbler! It was delicious! I love how wedding parties are getting away from traditional cake now, and moving toward more comfort desserts. (At this river wedding, they also served fresh berry pies!)

Start small

Lately, we’ve been entertaining on a smaller level. It just seems to work out that way, where we’ll have 6 around the table, which is a nice, cozy number.

We mixed the Talavera Roja and Azul red and blue salad and dinner plates.

Quick Entertaining Mixed Berry Cobbler Recipe

Even our dessert matched the theme of the party (love Oregon berries!). For this recipe you want to use frozen berries. I love to freeze bags from our yard (raspberries), and mix them, but you can also buy the pre-mixed in the freezer section of the grocery store.

Add a cake mix and a can of soda. Do not stir the cake.

When the guests arrived, I popped this easy Mixed Berry Cobbler into the oven.

Right before dessert time, I put the cake back into the oven on “broil” and browned the cake on top for a few minutes.

Then we served it with vanilla ice cream.

What I also love about this dessert is you can always be ready for a spontaneous get-together.

Mixed Berry Cobbler

TIP: Use a sugar free cake mix and a diet soda for a diabetic dessert.

Ingredients
 

  • 1 12-ounce can cream soda
  • 1 box white cake mix
  • 1 32-ounce bags frozen mixed berries
  • 1/4 cup butter
  •  

Instructions
 

  • Preheat oven to 350 degrees. In a 9×13-inch baking dish, place the frozen berries. If any are large, cut in half.
  • Sprinkle the dry cake mix over the fruit. Pour the can of soda over the mixture. Do not stir!
  • Bake for 50 minutes.
  • Right before serving, drizzle the melted butter over the cake, and broil for 2-5 minutes, until the top is crispy.
  • Serve warm with vanilla ice cream.
