Watermelon Pico de Gallo
Fresh salsa like this recipe consists of dicing and chopping your favorite ingredients. When you have extra watermelon on the counter, get your knife out, and add in mango, garden cucumbers, jalapeno, red onion, and lime. The citrus, alond with a tiny bit of sugar, makes this party-dip delicious.

- Stir together the lime zest, lime juice, sugar (or honey); lightly salt and pepper.

Could you freeze this? I know that the watermelon would turn to mush if completely defrosted but I am thinking about serving partially frozen.

I’ve seen some great looking fruit salsas over the years and have never tried them. I think I’ll have to give this one a try.
What a beautiful salsa – I would want the whole bowl to myself! We used to take weekend car rides, too. Just head out in any direction and see where it took us. We usually ended up at some park or the home of friends or family, or somewhere casual to eat. Super casual, always fun.

I don’t remember much special about watermelon when I was little but when my girls were little we would make watermelon Ice, which they loved and it was a yummy treat for them
