Friends, are you enjoying the last week of August? I’ve been updating quite a few old posts (since I’ve been blogging since 2006) and this Quinoa and Currant Summer Salad Recipe today is one of our favorites from 4 years ago.
Quinoa and Currant Summer Salad Recipe
This recipe is very similar to my Delicious Pear Quinoa Salad or Strawberry Quinoa Salad with Basil) but filled with summer veggies! Also delicious served with Oven Baked Salmon with Blackberry Barbecue Sauce!
What’s in a quinoa salad?
Packed with veggies and quinoa, and a very light dressing, you can use currants or dried blueberries. I like to buy several small bags of wild dried blueberries from Trader Joe’s to keep on hand just for this salad. But again, currants are just as delicious.
Oh, and did I mention the sugar snap peas? A great addition to this salad!

Like spending 3 days with our friends from Portland, with their three little kids.
With our kids being 26, 24, and 22 now, we’re really digging the little kids’ ages.
They are so cute, interactive, and fun to be with, and to be quite honest, it does make me miss the younger years of parenting. But not how exhausted I always was! :)
Parenting 3 kids was so fun, but honestly, I don’t think we’re ever prepared for how hard it is, and how it’s essential to go with the flow in life. Looking back, man am I glad that I learned to put perfectionism aside, and really love on my kids. Now they are BIG kids and we are reaping the rewards of all those hard years of parenting. Whew!
Why we love quinoa
We do a lot of cooking when our friends come to town, and Steph is great about bringing food with her, and they, like us – like to eat fresh!
This trip she brought a killer quinoa salad that I couldn’t wait to make again. We’re big quinoa fans here, but I’m always amazed at how many people don’t really know what it is.
We love quinoa because it’s packed with protein and is also wheat free! (Yay, a salad to make when you are hosting Vegetarians and Vegans!)
It also takes little time to cook, way less time than other whole grains.
Add a bit of olive oil, sea salt and lemon juice and – yum!

So here’s the fabulous, fresh, and family-friendly recipe that I think you’ll love.
And our BIG kids today still ask me to make this salad (4 years later!)

Quinoa and Currant Summer Salad Recipe
Ingredients
- 1/2 cup chopped parsley
- 1/2 c chopped cilantro
- 1/4 cup lemon or lime juice
- 1 tsp. agave nectar or honey
- 1/2 cup olive oil
- 2 cups cooked quinoa
- 1/3 cup currants
- 1/2 cup chopped or sliced almonds
- 3/4 cup julienned carrots
- 1/4 cup chopped mint
- 3/4 cup bell pepper, chopped
- 1 cup chopped sugar snap peas
- 1/4 cup red onion, diced
- 1 cup cucumber, diced
- salt and pepper to taste
Instructions
- For the dressing, combine lime, olive oil, honey, and a pint of salt and pepper. Mix together and set aside.
- Next, in a large bowl, combine remaining ingredients. Pour over the dressing, then toss salad until everything is evenly coated in dressing.
- Refrigerate and serve cold.

this looks incredible!! i love quinoa salads … one of my faVorites has similar ingredients as this one, including the mint, which totally makes the salad. i do love to add feta cheese :)

This sounds fabulous! Do you think it’s ok to substitute raisins for currants? I don’t stock currants in my pantry but I do have raisins! Can’t wait to try!

So funny…..I was just putting together a quinoa salad with some leftover from Sunday dinner. I’m using a curry yogurt dressing and adding mango, raisins and onions. The main meal was ratatouille served over steamed quinoa (all veggies grown from the garden). Love the nutty taste of the quinoa.
Oh Sandy I’m loving this!! My favorite way to eat quinoa is in salad form like this. I love the nuts & sweetness from the currents mixed in, yum!!
