These amazing grilled cheese sandwiches are no exception. Loaded with bacon and with a fiery kick from the jalapenos, they’re melty, smoky, meaty, spicy, and delicious. They’re also easy to make, and the secret is in the cheese.

The key to making a perfectly melty grilled cheese sandwich isn’t in the amount of cheese you use, but rather the kind of cheese you pick. And, with a blend of cream cheese and cheddar cheese, these easy sandwiches are pretty darn epic!

This recipe makes 4 sandwiches, but the beauty of a Blackstone griddle is you can make as many as you have room for! If you have the big 36-inch griddle, you can easily cook a dozen sandwiches at a time, which is enough to feed the whole gang! You can also try our Blackstone Smash burgers!

  • Jalapenos – Remove the seeds and inner membranes and finely chop
  • Cream cheese – Softened.
  • Garlic salt
  • Cheddar cheese – Sliced. You’ll need 2 slices per sandwich
  • Bread – See my tips below

  • Butter

What bread makes the best Blackstone Grilled Cheese sandwiches?

The easy answer is that any bread can be used, however, for the most delicious sandwiches, use thicker-cut bakery fresh bread. Some of my favorite sandwich breads are:

  • Sourdough
  • Crusty French or Italian bread
  • Harvest grain

How to make Blackstone Grilled Cheese Sandwiches

  1. Preheat your Blackstone Griddle to medium; if it’s an electric griddle, set it to 400F.
  2. Combine the cream cheese, finely chopped jalapenos, and garlic salt in a small bowl.
  3. Lay 4 slices of bread on a cutting board or flat surface, and top each slice of bread with 1 slice of cheddar.
  4. Divide the cream cheese-jalapeno filling onto each sandwich and spread it out evenly to each edge.
  5. Cut the bacon slices in half and divide them evenly over the top of the jalapeno filling.
  6. Top with the remaining slices of cheese and then cover with the remaining slices of bread to make a sandwich.
  7. Spread the butter on the outward-facing sides of the bread on each sandwich, then transfer the assembled sandwiches to the griddle.
  8. Cook for about 1-3 minutes or until the bread is golden brown. Flip the grilled cheese and grill on the other side until the bread is golden-brown and the cheese has melted.
  9. Cut in half and serve with tomato soup or your favorite chips!

Tips & substitutions

  • Use a cooking dome to help lock in the heat and so the cheese can melt more easily.
  • Don’t overcook your sandwiches and watch carefully that the bread or cheese doesn’t burn.
  • Adjust the spice level by adding more or fewer jalapenos to suit your tastes.
  • Switch up the cheese! Sharp cheddar, smoked cheese, spicy cheese, or whatever you like will work well in this sandwich as long as it is an easily melting cheese.

Store any leftover sandwiches tightly wrapped in the fridge for 1-2 days. Grilled cheese sandwiches are better fresh as they will lose their crispness over time. You can try reheating and crisping them back up on the griddle, in an air fryer, or just in a skillet on the stove over low heat.

Blackstone Grilled Cheese

Crispy and filled with bacon, jalapenos, and miles of melty cheese, these are the most epic Blackstone Grilled Cheese sandwiches ever!

  • 2-3 Jalapenos chopped and seeds and membranes removed
  • 6 ounces cream cheese softened
  • ½ teaspoon garlic salt
  • 8 slices of cheddar cheese
  • 8 slices bread
  • 6 slices bacon fully cooked
  • 6 tablespoons butter


  • In a small mixing bowl, make the cream cheese mixture: Combine the cream cheese, chopped jalapeños, and garlic salt.
  • On a cutting board or flat surface, lay out four slices of bread and top each with one slice of cheese.
  • Divide the jalapeño filling onto each sandwich and spread out evenly to the edges.
  • Cut the slices of bacon in half and place onto the four sandwiches over top of the jalapeño filling.
  • Add the cheese slices on top of the bacon, and then place the remaining slices of bread on top.
  • Preheat flat top Blackstone Griddle on medium heat.  With an electric Blackstone griddle, set the dial to 400°F.
  • Spread butter onto the outward-facing sides of the bread on each sandwich.
  • When the Blackstone Griddle is hot, place the assembled sandwich so the bottom buttered layer of bread is on top of the Blackstone Griddle flat top grill.
  • Cook for about 1 to 3 minutes until the buttered bread is golden brown. Use a lid to help with the cheese melting process.  Make sure to keep an eye on the cheese sandwich so that it does not get over done and burn the bread.
  • Using a spatula, flip the Blackstone grilled cheese and grill the other side until golden brown and the cheese is melted.
  • Make sure the cheese is fully melted. Remove from the hot flat top griddle when done and serve immediately.
  • Cut the sandwich in half and serve with your favorite tomato soup or chips!
