Butter Leaf Lettuce Summer Salad

This salad is so colorful and delicious for spring or Mother’s Day!

Life has definitely slowed down. I’m happy to say I have not done one Zoom meeting, and I’m just taking my days slowly, one day at a time. Other than a few scheduled calls, working from home, which I’m used to, is about the same as before.

What’s missing is a social life! I do not miss the rushing around or having to be here or there, although our life didn’t revolve much around that. We live a quieter life here in the mountains, a much more contemplative lifestyle indeed.

I do miss entertaining, and we can’t wait to have people over SOON. When will “soon” be here, we are all asking ourselves!?

Ingredients for Butter Leaf Lettuce Summer Salad

  • Butter leaf lettuce (buy the whole head)
  • Radicchio
  • Soft boiled eggs
  • Cherry tomatoes, corn, radishes, cucumbers, carrots
  • Fresh chives
  • Make your own dressing (recipe below) or buy our favorite Marzetti Simply 60 Dijon Honey Mustard Vinaigrette

What is butter lettuce salad?

Butter lettuce, as its name suggests, is so tender that it melts in your mouth like butter. It’s so tender!

This salad is composed of tender butter lettuce leaves, radicchio, and fresh sliced veggies. It’s a feast for the eyes and the tastebuds.

Are bibb lettuce and butter lettuce the same thing?

Butter lettuce is also called Boston or bibb lettuce. It has large, loose leaves and is a dark green color. Having grown this kind of lettuce in our garden for years, it can go to seed quickly.

A quick tip: A sweet or bitter smell means sweet or bitter flavor. Buying in the grocery store, you are pretty sure to always be buying sweet buttery lettuce!

How do you wash butter leaf lettuce?

  1. Handle the leaves gently when washing them.
  2. Dry well with a salad spinner or shake gently in a clean kitchen towel. Patting too hard can squish the lettuce and make it wilty.
  3. To avoid crushing the leaves, tear large ones individually instead of cutting the heads.

Salad

  • 1 head butter leaf lettuce
  • 1 small head radicchio, roughy shaven or chopped
  • 2-3 soft boiled eggs
  • 1/2 c halved cherry tomatoes
  • 1 cob corn, boiled, kernels removed
  • 1-2 radishes, finely sliced with mandolin
  • 1/4 English cucumber
  • 2 medium carrots, finely sliced
  • 1/4 c chopped chives

Honey Dijon Dressing

Instructions
 

  • Whisk together the ingredients for the dressing until emulsified—refrigerate until serving.
