Friends, our sons turned 25 and 23 in the past week. May has been their “birthday month” for many years now, and it’s always fun when we’re together to celebrate.
Having gone to Seattle with the gang a few weeks ago, we all decided seeing the U2 Joshua Tree Tour for all of our birthday presents this year!
One thing about our boys is they are grateful young men. It’s nice to be around them. Gratitude spawns kindness and generosity. They are good with people, and they truly care about others and are interested in their lives. There are not a lot of young people who are willing and interested in investing in other people these days. Maybe it’s because I’m their mom–their biggest fans (as they both say – ha ha). I’m very excited to see where they go in life.

Chicken Pineapple Cilantro Layered Salad
Last week the boys requested a salad for dinner, so we made a delicious Chicken Pineapple Cilantro Layered Salad. Have you tried Briannas Cilantro Lime Dressing? It’s super yummy on this salad, with chicken, pineapple, beans, tomatoes, cilantro, and queso fresco cheese.
So refreshing! (Note, I added black and kidney beans, but I think next time I’ll just add 2 cans of black beans.)
Hey! We have new garden beds! I am so thrilled with how they turned out! On the side of the house we have hot sun. Remember our deck wraps around our house with no access to the ground (yay, no deer get to visit our garden!)
On the other side we’ll be planting tomatoes, more herbs (basil), rosemary, and more lettuce.
We’re wondering if we can do baby potatoes.
Stay tuned – I’ll be keeping y’all updated on the gardening progress, and a DIY post how we built the beds. We heard it’s rare to have a garden here, but like I said, no deer or wildlife can get to it.

Chicken Pineapple Cilantro Layered Salad
Ingredients
- 1 cup Briannas Creamy Cilantro Lime Dressing, or our favorite dressing
- 1 pound rotisserie chicken, chopped
- 1 15 oz. can Bush’s Black Beans rinsed and drained
- 1 15 oz. can Bush’s Kidney Beans, optional, if you want more beans, or add 2 cans of black beans, rinsed and drained
- 2 large romaine hearts, chopped
- 1 20 oz. can pineapple chunks, drained (or 1 1/2 cups fresh pineapple)
- 2 cups cherry tomatoes, sliced in half
- 1 cup queso fresco cheese, crumbled
- 1 cup fresh cilantro, chopped
- Avocado, optional
Instructions
- In a large glass bowl, layer half the lettuce, all of the chicken, beans, half the lettuce, pineapple, cheese, tomatoes, and cilantro.
- Serve with a side of dressing!
- Optional to dump all ingredients in a large bowl; toss and serve (instead of layering the ingredients).
- Serve immediately, or toss together in a large bowl. You can cover with plastic wrap and refrigerate until ready to serve.

I love cilantro to a point, but not too much..lol. I also noticed how often cilantro is added to dishes that I would never think to add it to when I’m watching cooking shows…I guess I’ve always just seen it as for mexican. Hmmm….
