Next, make these Gluten-Free Pumpkin Peanut Butter Cookies; bake, cool, and freeze. That is if you don’t devour them before they make it to the freezer :)

- Combine the 2 recipes together for this easy recipe!
- Wrap in parchment paper or wax paper, with a simple string tied around them, and FREEZE!
- Pull out of the freezer a few minutes before you’re ready to serve!

How to make ice cream sandwiches
- Make ahead my pumpkin cookie recipe and freeze.
- Lay the frozen pumpkin cookies onto a baking sheet. Portion out the ice cream onto the cookies according to how many cookies you have (10 cookies makes 5 sandwiches, 12 makes 6, etc).
- Press the ice cream between the cookies, then wrap in wax paper (tie with twine, if available) and return to the freezer.
- Allow them to freeze for at least an hour before serving.

- 32 oz pumpkin ice cream, link to no churn ice cream recipe
Instructions
