Easy Rainbow Breakfast Board
Make an Easy Rainbow Breakfast Board with vibrant colors of fruit, and a pot of gold coin chocolates! Oh, yes, and almost everything was purchased at Trader Joe’s, so it’s one easy stop to pick up the ingredients. For delicious breakfast boards, you can also make our waffle board, French toast board, and bagel board.
We’re ready for spring, fresh fruit, and of course St. Patrick’s Day this week. But you can make this board any day of the year. The only thing better than how festive this board is, is how quick and easy it is to put together. Just watch my Instagram here.
You can get kids involved in making this board, by letting them make their own creation. That is what I love about boards. There is no right or wrong way to make them. As I always say, use what you have, and make it your own.
Why make this board for St. Patrick’s Day

Ingredients for a Rainbow Breakfast
- Blackberries, strawberries, cantaloupe, mango, raspberries, blueberries
- Coconut strips
- Silver Dollar Pancakes (in freezer section at Trader Joe’s)
- Maple syrup
- Marin French Brie Cheese
- Milk chocolate coins
- Butter
Sky’s the limit on the fruit that you can use for this breakfast board. You can also serve French toast or scrambled eggs in place of the pancakes. Or, make a Waffle Board! These Rainbow Pancakes are adorable, too.
Fruit options for a rainbow:
- Red: Strawberries, raspberries, watermelon, cherries, pomegranate seeds
- Orange: Tangerines, apricots, orange slices
- Yellow: Banana Slices, pineapple, golden kiwi
- Green: Kiwi (green is optional)

So how do you make a rainbow fruit and cheese board for St. Patrick’s Day?
- Take a large round prepared board (The Big Board works great for this), and start at the top, and layer the following fruit in a round rainbow fashion: blackberries, strawberries, cantaloupe, mango, coconut strips, raspberries.
- Heat up the pancakes and keep warm until serving. When ready to serve, place on a plate on the lower left of the board. (Remember if plate is hot, use a hot pad.)
- To the right, add the Brie cheese, syrup, and chocolate coins.
- To the left, place the butter.
- Fill in open areas at the bottom with fresh blueberries. On a hot pad, place the hot plate of pancakes on the board and serve right away!

Easy Rainbow Breakfast Board
Ingredients
- 12 oz blackberries
- 12 oz strawberries
- 12 oz cantaloupe, cut into chunks
- 12 oz mango, cut into chunks
- 1 6 oz package coconut strips
- 1 6 oz raspberries
- 2 11.3 oz boxes Silver Dollar Pancakes, in freezer section
- 8 oz maple syrup
- 1 4 oz round of Marin French Brie Cheese
- 8 oz blueberries
- 3 oz milk chocolate coins
- 1/4 cup butter
Instructions
- On a large, round prepared board, start at the top and layer the following fruit in a round rainbow fashion: blackberries, strawberries, cantaloupe, mango, coconut strips, raspberries.
- On a large plate, heat up the pancakes and keep warm until serving. When ready to serve, place the plate on the lower left of the board.
