Perfect for the weekend and casual entertaining … this Epic Roast Beef Sandwich Board! And what goes well with cold roast beef sandwiches? Trader Joe’s Macaroni Salad.

Roast beef is one of my family’s favorite dinners, whether we’re enjoying a crock pot pot roast or a prime rib–we’re all about the leftovers! Or, this hot roast beef sandwich (barbecue) would be amazing served on the BIG BOARD.

But one of my favorite ways to use leftover roast beef is to make a classic roast beef sandwich. There’s nothing quite like a super flavorful sandwich with roast beef leftovers, so today we’re going to show you how to make them unique. Serve a big board with all the toppings – to make the best sandwiches. 

Just in time for game day (or a gathering coming up), we love how easy this board comes together.

We served this board a few years back for Super Bowl, but honestly, it’s great for any time of year.

Ingredients for Epic Roast Beef Sandwich Board

  • Bread: Dinner rolls and deli roast beef
  • SaladsMacaroni Salad or Best Potato Salad or Best Italian Pasta Salad Recipe
  • Cheese: Swiss cheese, Cheddar cheese, and Pepper Jack cheese
  • Veggies: Red onion, Romaine lettuce leaves, and red and green grapes
  • Condiments: Yellow mustard and Aoli mustard + mayonnaise + bread and butter pickles
  • Guacamole
  • Salami (or salami cheese rolls)
  • Fruit: add your favorite fruit

How to make a roast beef sandwich board

  1. On a large prepared BIG BOARD, leave a space in the center for the bowl for Macaroni Salad.
  2. Around the outside, lay down the lettuce leaves, then the rolls.
  3. Slice the rolls in half and butter.
  4. TIP: Right before you’re ready to serve, toast the buns (under broiler) for 1-2 minutes. This makes the sandwiches softer and more delicious!
  5. Put the dips and condiments in small bowls and place on the board. Arrange the meats and cheeses around the small bowls.
  6. Fill in the open areas with grapes.
  7. Right before serving, place the salad in the middle. Toast the buns and put them back on the platter. SERVE!

How to prepare the board for company (make ahead)

  1. Make my Macaroni Salad ahead (it’s best refrigerated for a few hours or overnight anyway!)
  2. Get your ingredients organized.
  3. Assemble the board right before your guests arrive.
  4. Pull the salad from the fridge and place in the middle.

Keep entertaining light and fun

Keeping entertaining light, fun, and simple works best for me. I hate getting stressed out when people are coming for dinner! Yes, simplicity is key, because who wants any more stress?

But more than just simplicity for me it’s mood – depending on life, schedules, budget and time.

And although I like simple, I too like some effort. I don’t know about you, but walking into someone’s home when they’ve made some attempt to set a table, perfect or not, and light a few candles, makes me feel good. So mood is important.

What I love about a board is that you can prepare most of it ahead of time.

Tips and substitutions:

  • Right before you’re read to serve, toast the buns (under broil) for 1-2 minutes. This makes the sandwiches softer and more delicious!
  • Serving a crowd? Fill the entire board with sandwich ingredients, and serve beverages, chips, and salads on the side.
  • Substitute the roast beef for turkey or  ham, or both (and and bacon) for a Club Sandwich Board.
  • Use slider  buns in place of the rolls, or regurlar bread slices.
  • Instead of Macaroni Salad, serve a potato salad, pasta salad, or even a large green salad.
