How to Make Impossible Quiche Pie
My friend Kristi shared this recipe with me about 10 years ago, and my mom made this when I was a kid.
- Spray a 9×13 pan with cooking spray (or a round Le Creuset braiser).
- Blend together the milk, baking mix, eggs, cheese, salt, and pepper.
- Pour over your choice of these ingredients in the bottom of the pan: Bacon, sausage, ham, chilies, grates zucchini, tomatoes, mushrooms, green onions, red onions.
- Sprinkle with fresh basil or cilantro.
- Bake. The quiche may be slightly jiggly in the center, which is okay. Allow it to sit for 5 minutes before cutting into it.
- Cut into servings and serve with your favorite toppings, such as sour cream, salsa, tomato, or more herbs.
How do you make your own Bisquick (or baking mix?)
Mix together 1 cup flour, 1/4 t salt, 1 1/2 baking powder, and 1 tablespoon butter.
Tips and substitutions:
This time we added bacon, green chilies, tomatoes and grated zucchini this recipe, but there are so many options.
Want to use leftover ham? Delicious with ham, cheese, and green pepper.
Make a BLT with bacon and tomatoes, served with lettuce on top, with a drizzle of a light basil dressing.
What’s the easy base recipe? Milk, eggs, cheese, and a baking mix. (You can use Bisquick or Pamela’s for gluten-free).

Buy disposable pans, like these deep foil pans (9×13) to make this recipe in BULK, so the recipients don’t have to get the dish back to you!
But this recipe also works beautifully in this 3.5 quart braiser, which we used in these photos.

Hi Sandy,
Under Recipe Ingredients, it indicates 1 cup of veggies. Then step 3. indicates about 2 cups of veggies. Have you found one amount vs. the other works best?
I am working with leftovers of black beans, pico de gallo, and a bit of corn (alas, no meat leftovers…my guys ate it all!;))
And your recipes…
ALWAYS DELICIOUS!!!
In sincere admiration and great appreciation, Thank You! {Hug}
I would add 1 cup! I’ll check that out.
The recipe says 1 1/2 baking powder. Is it teaspoons or tablespoons?
If you’re making your own “bisquick mix” it’s 1/2 tsp. Thanks (I fixed the notes).
Do you cook the bacon before adding it?
yes!
Can you put this together the night before and then bake the next morning?
Hi Debbi, I have not tried that, but I bet you can. Let us know if it worked for you!
Love this recipe and method. Thank you.
This looks marvelous! I plan to serve on my next girlfriends luncheon! Thank you so much for sharing.
And what are your favorite vegetables to use in this quiche?
Already steamed broccoli (chopped), green onions, and red pepper are my favorite!
Is there a keto baking mix I can use, perhaps almond flour?
Hi, June. I have not tried this, so I can’t recommend one. Let me know if you find it works!

How would this freeze?
I do believe you could freeze this, but I haven’t tried it. If you do, come back and let me know how it is! :)
Always made this with Bisquick. We’re gluten sensitive now, glad I can make this terrific recipe (an old favorite) with Pamela’s now. So happy I looked it up :-)
BisquIc is just 1 cup flour 1/4 t salt 1 1/2 baking powder and 1 tablespoon butter
THANK YOU Denise! I looked everywhere for small batch baking mix substitute. I use it so rarely that I can’t see making a huge batch. I ended up buying an alternative box mix that starts with K and ends with rusteaz. I could not buy powdered milk and shortening for the $2.50 I spent on that box.
In this recipe, egg and milk heavy, your little ratio of ingredients really helps me make a childhood fave with less MESS and expense.
Thank you for sharing.
Hi Sandy, I lurvvve all your recipes – you’re amazing! Just wondering whether you could help me here. I’m in Australia , where Bisquick is unavailable – is there a substitute I could use in its place? Thanks in advance, Sandy!
Rochelle. ??
Hi there, can you buy Pamela’s Baking Mix? Thank you Rochelle!
This is such a great recipe! Comes out perfect every time. :)
This quiche pie is absolutely AHH-mazing! Thanks for the recipe!
