People can come and just sit with you. Like when my husband’s father passed, my aunt and uncle came to our house and brought a pie. They just sat with us for hours. It was incredible. My husband and I still talk about how profound their presence was in our lives, when we needed them most.

I think of the food she cooks when she is home (she is a WAY better cook than I am), and how passionate she is about it.

In fact, when a college-mate passed away from a tragic accident a few months ago, Abby called me and said, mom, would you pay for the groceries if I take enchiladas to the “guys’” house? (Five guys lived together, with the young man who had a hiking accident).

Of course, my sweet, caring, sensitive, thoughtful girl. So Abby took several large pans Green Enchilada Chicken Bake Casserole to be devoured by all.

We enjoyed it from Butcher Box (who sent me a large sample box of delicious organic meats), in a delicious sauce.

Served with brown rice.

Organic Teriyaki Chicken Recipe

Organic Teriyaki Chicken Recipe

Ingredients

  • 1/4 c. lime juice
  • 1/2 c soy sauce or coconut aminos for SOY free gluten free soy sauce exists
  • 2 Tbsp. honey
  • 3 Tbsp. fresh minced garlic
  • 2 Tbsp. fresh minced ginger
  • 2 Tbsp. olive oil
  • 6 chicken breasts tenderized
  • 2 c. cooked brown rice
  • 1/4-1/2 c. chopped green onion
  • 2-3 cups of mixed veggies to steam

Instructions

  • Combine lime, soy sauce, honey, 1 Tbsp. ginger, and 2 Tbsp. garlic in a large bowl and thoroughly mix. Add chicken breasts and allow to marinate for 30 minutes.
  • Heat a large sauce pan. When hot, add chicken, pouring the remaining marinade on top.
  • Cook for 15-20 minutes.
  • Remove from pan and chop into strips.
  • Using your instapot, steam broccoli for 2 minutes, using the quick release when time is up. Add and additional 1-2 minutes for carrots and Brussel's sprouts.
  • In large sauce pan, heat 2 Tbsp oil. Add 1 Tbsp. garlic and 1 Tbsp. ginger, stirring until golden. Add in rice and continue to cook for about 5-7 minutes. Add in the green onion and remove from heat.
  • Serve chicken, rice, and veggies together with desired sauce.

  1. Such a great post. You are right, food binds us as we join together to share a meal or bring something comforting to a friend who is hurting or down. And so thoughtful of your sweet girl. This morning I woke up to read a post on FB written by my youngest (who is a goofball, silly, sassy, but can also write some very deep things). She was reflecting on her role as a youth leader and how she literally has grown up her entire life immersed in this because we were youth pastors when they were little. To hear her write about how it impacted her, and how much she loves leading with her older sis and BIL (who are youth pastors) touched me on a deeper level.

    Is the ginger split in the recipe because 1 TBSP goes in the marinade and 2 TBSP for the rice? This sounds like a delicious recipe – not too saucy but still with lots of flavor. thanks!

  3. You and your husband are such great parents! See how your values and lessons have been instilled in your children? I got teary-eyed when you mentioned how much you miss your daughter who’s off to college. I have a 9th grader this year and I’m already dreading the day he leaves. But look, you did such an amazing job with her and she’s become a beautifully spirited young lady who cares about others. That makes my heart smile.

    The recipe sounds amazing as well. Can’t wait to try it. Pulled chicken breast out for dinner so I’m thinking this might be on the menu tonight. Happy Monday!
