Today we’re sharing a favorite winter soup, this hearty One Pot Portugese Sausage Bacon Tomato Soup recipe! It’s perfect for soup night, the weekend, Sunday supper, a very comforting stew recipe indeed!
Sausage Bacon Tomato Soup
You’ve been enjoying the snow where you live, too? We’ve have had a LOT in the Pacific Northwest, but we’re staying cozy and enjoying a bowl of this Sausage Bacon Tomato Soup. Maybe you’ve tried some of my soup recipes, like this popular Seafood Chowder, Slow Cooker White Bean Basil Chicken Soup, and 30-minute Ground Turkey Lasagna Soup.
One thing I want to prioritize myself with this year is to be still, take breaks, and look outside. I mean, we live in the most gorgeous place (and the snow has such a “wow” effect). To silence my thoughts and focus on all the good around me, the many blessings, is a good thing. A practice for me, to be mindful of this several times a day.
Even as I’m cooking … we have tons of windows in our home to look out to take in the beauty.
Serve tomato soup on a board
We love a good tomato soup (and with grilled cheese? come on!), so this recipe takes it up a notch. It’s all made in one pot, and has a Portugese flair to the recipe.
You can also serve tomato soup and grilled cheese on a tray.
Pot of Sausage Bacon Tomato Soup Ingredients:
All ou need are these ingredients to make this recipe:
- Thick slices of bacon
- Yellow onion + garlic
- Smoked paprika + cumin + cinnamon + black pepper
- Portugese sausage, sweet or spicy
- Yukon Gold potatoes
- Dried oregano + bay leaves
- Can of crushed tomatoes
- Vegetable or chicken stock
- Tuscan kale
- Fresh dill
- Salt & pepper
Toppings to add to the tomato stew:
- Lime wedges
- Sour cream
- Parmesan cheese
- Crunchy bread
Here are some tips to making the cooking process easier:
- Having precooked sausage is a life saver when you don’t have tons of time.
- This recipe calls for Portuguese sausage, but you can also use apple and chicken sausage, or spicy Italian, as a delicious substitute.
- You can add extra veggies like carrots and celery, as well as beans, to add more protein and fiber.
- Crush a few pieces of potato and mix back into the pot.
Like any stew, the longer it sits, the better it tastes, so this is a great recipe to eat throughout the week—and the best part is that it is made in one pot!

Sausage Bacon Tomato Soup
Ingredients
- 8 slices thick cut bacon, roughly chopped
- 1 large yellow onion, diced
- 6 cloves garlic, minced or crushed
- 2 ½ tsp smoked paprika
- 2 tsp cumin
- ½ tsp cinnamon
- 1 ½ tsp black pepper
- 3 links, about 18 oz Portugese sausage, sweet or spicy, cut into 1/2’’ diagonal pieces
- 4-5 Yukon Gold potatoes, peeled, diced 3/4’’ thick
- 1 Tbsp dried oregano
- 2 fresh bay leaves, 3 dried
- 1 28 oz can crushed tomatoes
- 2 c vegetable or chicken stock
- 1 bunch Tuscan kale, stems removed, washed, cut into 2’’ pieces
- ⅓ c dill, roughly chopped, plus more to garnish
- Salt to taste
To serve:
- Lime wedges
- Sour cream
- Parmesan cheese
- Crunchy bread
Instructions
- In a large pot or Dutch oven, add the bacon over medium-low heat. Once the fat has rendered, 5-7 minutes, increase heat to medium and add the paprika, cumin, cinnamon, and pepper. Cook 1-2 minutes to bloom the spices, then reduce heat to medium-low and add the onions and garlic.
- Cook until softened, 5-7 minutes. Add the sausage, potatoes, and a pinch of salt, cooking 3-4 minutes. Finally, add the oregano, bay leaf, tomatoes, and broth. Bring to a boil, then reduce heat and simmer for 35-45 minutes, until potatoes are fork tender.
- Fifteen minutes before serving, stir in the kale to wilt. Taste or salt, and, using the back of a fork, crush a few pieces of potato and mix back into the pot to thicken it. Serve warm with dill, Parmesan, lime, sour cream, and crunchy bread.
