Shaved Brussels Sprout Salad
Instead of roasting Brussels sprouts, shave and toss them with a light vinaigrette for this Shaved Brussels Sprout Salad.
Friends, just in time for Thanksgiving, ….. this amazing Brussels Sprout Salad. It’s similar to a Waldorf Brussels Sprout Salad, but but made with mandarin oranges, almonds, apples, and more!
Some people turn up their noses at Brussels sprouts, but our family loves them. We also serve for Thanksgiving these Brussels Sprouts with Honey Mustard Glaze but for today, I’m sharing this Shaved Brussels Sprout Salad with Lemon Honey Dijon Vinaigrette salad.
Shaved Brussels Sprout Salad
You can roast the sprouts first or you can finely shave them and serve raw. Also, it’s optional to grate the apples if you don’t want apple chunks. Either way, it’s a delicous salad.
Ingredients for Shaved Brussels Sprouts Salad
- Shaved Brussels sprouts
- Romain lettuce
- Crumbled or shaven pecorino cheese
- Dried cranberries
- Toasted almonds
- Fuji, pink lady, or honey crisp apple
- Mandarin oranges
- Rosemary
Shaved Brussels Sprout salad dressing
- Fresh lemon juice
- Dijon mustard
- Olive oil
- Honey
- Salt
How to make the salad
- In a small bowl, combine all dressing ingredients together, and whisk until honey dissolves and dressing is smooth.
- In a large salad bowl, toss Brussels sprouts and romaine together. Next, add cheese, cranberries, almonds, and oranges, then toss with vinaigrette and garnish with fresh rosemary.
- Serve!
The dressing is light and fresh.

This holiday season, let’s slow down and enjoy the moments.
I recently took a walk at dusk and grabbed the sunset in my mind for a memory. No phone, my husband was with me, and we both just sat with the chill of the air on our cheeks, for about 10 minutes.
Just taking it all in.
I plan to take it all in around our Thanksgiving table this year, too.
I cannot wait. Life is short; we need to savor it more.
Tips and substitutions:
- Use pear in place of apples.
- Shave the sprouts as thin as you can.
- Optional to roast the sprouts; cool and toss.
- Add in roasted kale (also cooked and cooled).
- Replace the almonds for chopped pecans, hazelnuts, or toasted walnuts.
- Use fresh orange slices in place of mandarin oranges.

- ½ c crumbled or shaven pecorino cheese

- 1 fuji, pink lady, or honey crisp apple, chopped
- 1 11 oz can mandarin oranges
- Fresh rosemary to garnish
