Silver Dollar Pancakes PBJ Board

I love making trays or platters or boards, because when food is presented on a unique and fun board, guests may be more willing to try new or previously disliked items.

But, we all know every kid loves a good PB&J, right?

PB& J Sandwiches

This time we used the Silver Dollar Pancakes from Trader Joe’s (you can keep these stocked in the freezer), and made mini peanut butter and jelly bites.

Let’s say you have leftover pancakes from this Epic Silver Dollar Pancake Board. Freeze them! They freeze so well.

Then you can pull them from the freezer, and they defrost in no time, and make mini peanut butter and jelly sandwiches.

Big-kid bites, too. I can’t stay away from these!

Ingredients to buy

All you need are these easy ingredients:

  • Silver Dollar Pancakes (you can buy at Trader Joe’s or make your own)
  • Peanut butter
  • Jelly
  • Pocky Sticks
  • Popcorn
  • Cherries
  • Blackberries

Kid snack boards

Boards are great for parties. You may have already tried my Kid-Friendly Grilled Cheese Charcuterie Board? Or this Holiday Kid-Friendly Charcuterie Board.

You also can prep these boards ahead and keep them refrigerated (if you’re not using the “epic board.”). They cut down on dishes too—you only have one “plate” to wash!

This kind of dinner presentation is super fun for kids, too. Even though I don’t think they really care.

Snacks for dinner

I don’t know, there’s the sheer novelty of having “snacks for dinner” (every kid’s dream), or just a snack in general.

Want to know a little secret? If I was a grandma, I’d be making these little Pb&Js all the time for my grandkids. Keep a box of these pancakes in the freezer at all times! :)

Oh, and this would be be great to serve for any holiday, even on my epic charcuterie/cheese board. A fun party snack for sure!

Ingredients
 

  • 1 box Silver Dollar Pancakes, you can buy at Trader Joe’s or make your own
  • Peanut butter
  • Jelly
  • 1 box Pocky Sticks
  • White popcorn, buy premade or make your own
  • Cherries
  • Blackberries

Instructions
 

  • On a large tray, board, or platter, arrange fresh cherries and blackberries (or fresh fruiin the center in a bowl.
  • Make peanut butter and jelly sandwiches with the pancakes, peanut butter, and jelly. Arrange on the outer rim of the tray.
  • Fill in the middle open area with popcorn.
  • Lay Pocky Sticks on the side of the fruit bowl. Serve!
