I came across this photo of parents (far right) about 60 years ago in Medford, with my mom’s sisters. This is the way they entertained, very simply, picnic-table style! (I so love this picture of my mom and dad!)

Spicy Peach Pecan Crisp Recipe

Inspired by my friend Robyn’s new book, I whipped up a Spicy Peach Crisp Recipe this past week, when my dad and his wife were visiting.

Robyn says this is freezer friendly: “Let the cooked peach crisp cool completely. Wrap tightly in plastic wrap, then foil. Store in a freezer bag in the freezer for up to 3 months. To serve, thaw in the refrigerator overnight. Reheat in a 350°F oven until warmed through, 10 to 15 minutes.”

If peaches are not in season, you can substitute apples, pears, blueberries, or marionberries, or blackberries. You can also use regular pecans or walnuts if don’t want to make this “spicy.” The jury is out for my family if they really liked the spice. It was a half and half consensus.

Spicy Peach Pecan Crisp Recipe

Ingredients
 

  • 1/2 cup 1 stick salted butter, at room temperature
  • 6 cups peeled and sliced fresh peaches, about 8 peaches
  • ¾ cup packed brown sugar
  • ½ cup all-purpose flour
  • 1 1/2 cups chopped sweet/spicy pecans, I buy at Trader Joe’s
  • 1 tsp. cinnamon
  • ½ tsp. salt
  • Vanilla ice cream or whipped cream, optional

Instructions
 

  • Preheat the oven to 350°F.
  • In a 12-inch ovenproof skillet melt 2 tablespoons of the butter over medium heat. Add the peaches and ¼ cup of the brown sugar. Cook, stirring for about 4-5 minutes. Remove the pan from the heat.
  • In a medium bowl, combine the remaining 4 tablespoons butter, ½ cup brown sugar, flour, spicy pecans, cinnamon, and salt. Spread the mixture over the peaches.
  • Bake until golden brown and bubbly, about 25 minutes. Serve warm with vanilla ice cream.
