This recipe was from my friend Gina, Skinnytaste, many years ago. We still make it to this day–it’s the prefect side dish.

- Kosher salt: To taste. It enhances all the flavors, balancing the spices and natural sweetness of the cauliflower.
- Crushed red pepper flakes: Provides a subtle kick of heat that livens up each bite.
- Chopped cilantro: Sprinkled at the end for a fresh, herbaceous finish that brightens the dish.

How do you make roasted cauliflower with turmeric?
Preheat and prepare:
- Preheat the oven to 450 degrees F and cut the cauliflower florets into 1-inch pieces.

Season the florets:
- Combine the florets with the smashed garlic in a large bowl.
- Drizzle with the olive oil and toss to coat.
- In a separate small bowl, combine the turmeric, cumin, pepper flakes, and salt. Sprinkle over the cauliflower and toss to coat.

Roast and serve:
- Spread the cauliflower out on a large rimmed baking sheet.
- Bake, stirring occasionally, until the florets are browned on the edges and tender, about 23-27 minutes.
- Remove the cauliflower from the oven, sprinkle with the fresh cilantro, and serve hot!

- Uniform-sized florets: Try to cut the florets into uniform 1-inch pieces so that they roast at the same rate and look even more appealing when served.
- Don’t overcrowd the pan: Give the florets space on the baking sheet. If they’re too close, they’ll steam instead of roast and you’ll miss out on those crispy, golden edges.
- Pat dry: If you’ve washed the cauliflower in preparation of following this recipe, make sure to pat it completely dry before tossing with oil. Keep in mind that any excess moisture will reduce browning.
- Easy cleanup: Line a large baking sheet with parchment paper or a silicone baking mat to prevent sticking and make cleanup easier.

Variations:

We had it with a strawberry & blue cheese salad with fruited balsamics, and a grilled beef tenderloin. Turmeric tastes just like it smells, so you will know intuitively what to cook it with. Add some chicken and basmati rice!
