Amuse Bouche

Here’s what makes an “amuse bouche” different than an appetizer: They are not ordered from a menu, but are solely served at the chef’s discretion (sometimes accompanied by a complementing wine).

In Ashland (Oregon), one of our favorite restaurants is called Amuse, where they serve an “amuse bouche,” presented to each guest at the start of the meal. It’s really fun–always a surprise–to see what the chef has up his “culinary” sleeve. Not a lot of restaurants will do this. It’s a classy touch, in my opinion.

What is watermelon?

Fun fact: Watermelon is both a fruit and a vegetable, and it is the state vegetable of Oklahoma. Oh, and we love it exactly this time of year in Best Watermelon Salsa (great with chips, or served on top of chicken, pork, fish, or steak!)

How to make amuse bouches for a dinner party:

-Use colorful, fresh ingredients.
-Make one small, powerful yet delicate bite for each guest.
-Combine flavors that will make your guests’ taste buds sing!
-Try to present it in a way that is simple, yet special, using a small plate, glass, or even a spoon.
-Surprise your guests. Don’t let them know ahead of time that it’s coming!

For this recipe today, I took a small piece of blue cheese, and wrapped it with prosciutto around a small square of watermelon.

  • 16 1- inch cubes seedless watermelon, chilled
  • 2 ounces blue cheese, crumbled into large chunks
  • 2 tablespoons honey
  • 2 ounces prosciutto, sliced
  • 16 pieces fresh basil leaves
  • Fresh ground kosher salt
  • Cracked black pepper


  • Using a sharp knife, cut 16 watermelon cubes, placing on a platter.
  • Place a folded basil leaf on top.
  • Holding both together, wrap a skinny piece of prosciutto around the “bite," and place back on the serving dish.
  • Place a large crumble of blue cheese on top of each watermelon chunk.
  • Do this for all 16 pieces.
  • Drizzle honey over each bite.
  • Lightly salt with kosher salt and fresh cracked pepper.
  • Serve individually on small serving plates.
