Easy to prepare and fresh in flavor, especially with the basil and sweetness of the apricots. Add the balsamic glaze for the ultimate bite! You may also want serve these on this lunch sandwich board.
Ingredients for Apricot Ricotta Bites Appetizer
A simple, yet elegant appetizer perfect for any occasion! All you need are these simple ingredients:
- Apricots
- Ricotta cheese
- Honey
- Fresh basil
- Sea salt
- Balsamic Glaze (I buy Delallo)
One thing I love to check off my list, when preparing for a dinner party, is knowing that all my outdoor furniture is clean and ready. Today I’m sharing a few simple tips that I’ve found to be helpful, to make entertaining a breeze!
Here’s a past dinner party in our old backyard back in southern Oregon–a pure delight!
Getting the entertaining space ready
Every few weeks, I’ve noticed that the summer patio furniture get a little grimy and gritty, collecting a lot of dust and pollen.
- Patio table and chairs: do a quick wipe down with hot soapy water.
- Clean the barbecue: Hubby’s job, but he uses Windex.
- Wipe down the ice buckets, drink containers, chargers, candles, umbrellas, side tables: Have you ever tried just using baby wipes or hand wipes? Works quickly.
Set the table
And set a beautiful table, with lavender from the garden.
This time of year is perfect for fresh appetizers, so once the patio was ready, I created a simple platter of Apricot Ricotta Honey Basil Bites for the dinner party.
These creamy delights are a summer must-make if you want something light and fresh!
Drizzle with balsamic glaze
Drizzled with the finest balsamic glaze (yum!), I was able to make these up ahead of time to chill in the fridge, then pull out as the guests arrived. (I buy my glaze from DeLallo Foods or Trader Joe’s.)
I have to say, there’ve been a few times where I did not wipe down the patio furniture, and even though the guests probably never noticed–I did. Just looking at them, I felt the grime and grit on the chairs and table.
With a quick wipe-down, for this party, I had everything whipped into shape in a matter of 20 minutes.

Apricot Ricotta Honey Basil Bites
Ingredients
- 12 apricots, seeded and cut into halves
- 1 cup ricotta cheese
- 2 Tbsp honey
- Fresh basil, finely chopped
- Sea salt
- Balsamic Glaze , I buy my glaze from DeLallo Foods or Trader Joe’s
Instructions
- Place the 24 apricot halves on a tray.
- In a small bowl, mix the ricotta and honey.
- Fill each apricot half with a dollop (about 2 Tbsp.) of ricotta mixture.
- Sprinkle with sea salt.
- Drizzle the bites with balsamic glaze. Sprinkle with finely chopped basil. Refrigerate if needed.
- Best if served at room temperature.

How did you make the balsamic reduction? Did you just boil down some balsamic vinegar? These look absolutely yummy! I bet you could also use peaches?

These apricot bites are so creative and pretty. I was thinking how good they would be using Angelcots or sometimes called Heavenlycots and adding some lavender buds on top.

I am a clean sponge freak! Any sign of mildew and into the microwave or dishwasher they go. These look extra awesome, I will pick some up to day. I can admit I have a sponge addiction :).
Yum…you had me at ricotta….I can eat that stuff with a spoon! I think for me, when it comes to having people over in the summer, it just doing quick clean ups..if we’re eating outside, making sure the porch is swept, but with the heat we’ve been having, we haven’t ventured outside to eat very often.
I love the extreme sponge – especially because it resists bacterial odors and doesn’t get stinky!!
