Friends, ready or not … summer is …. HERE! We are excited, and the nice weather has finally hit central Oregon. It’s been a rough spring, I’d say. But we are warm and enjoying every moment of the longer days.

Easy Caprese Sliders

Whether a light and healthy lunch, or an appetizer, snack, or dinner–everyone is going to be raving about these delicious Easy Caprese Sliders. I particularly love the simple ingredients!

These little sandwiches are perfect for the 4th of July–summer in general–and a great idea to serve on “the big board!”

Ingredients needed for Caprese Sliders:

  • French rolls (we bought at Newport Avenue Market here in Bend, OR)
  • Mozzarella cheese (you can buy in 2 large packs at Costco)
  • Tomatoes (we love heirloom tomatoes)
  • Large basil leaves
  • Olive oil
  • Flaky salt & fresh cracked pepper
  • Fresh garlic (to peel and rub on the rolls)
  • Balsamic glaze (we use Delallo brand)

How to make caprese sliders

It’s so easy. Start with cutting the rolls in half and toasting them with oil and garlic. Add cheese and melt.

Add fresh heirloom tomatoes, and a piece of fresh basil.

Place the top on the roll. Optional to drizzle with balsamic glaze! Serve!

This easy dinner was a huge hit, and has just a few ingredients, so it only takes a few minutes to throw together. But don’t forget, it’s great for a party and served on a charcuterie board, too.

I am all about easy these days, and these little bites of summery heaven are perfect!

Ingredients
 

  • 12 3x3 French rolls, we bought at Newport Avenue Market here in Bend, OR
  • 12 thick slices of mozzarella cheese, you can buy in 2 large packs at Costco
  • 12 thick slices of tomatoes, we love heirloom tomatoes
  • 12 large leaves of fresh basil
  • Olive oil
  • Flaky salt
  • Fresh cracked pepper
  • Fresh garlic, to peel and rub on the rolls
  • Balsamic glaze, we use Delallo brand

Instructions
 

  • Turn oven on to BROIL.
  • Slice 12 rolls in half (lengthwise) and place on a baking sheet. Drizzle with olive oil, and rub each half with several peeled, whole pieces of garlic.
  • Broil for 1-2 minutes, or until toasted.
  • Remove 12 top halves, and add a thick slice of mozzarella cheese to the bottom 12 halves. Broil 2-3 minutes until the cheese has melted and turns a little brown on top.
  • Remove from the oven and place a thick slice of tomato on top of the cheese, followed by a large basil leaf. Place the top back on and press down. Optional to use a skewer.
  • Drizzle with balsamic glaze. THE BEST!
  • Serve right away and enjoy!
