Shrimp Scampi Bites
Shrimp Scampi is Gorton’s take on an Italian classic, and it comes in a “Bake Perfect Oven Bag,” which makes it incredibly easy to prepare at home. Simply pop it in the oven, and the shrimp cooks to perfection, while the bag locks in flavor for a perfectly cooked meal.

Simply Bake Shrimp Scampi Taco Bites
All the taco delights are in this recipe—picco de gallo, pineapple, cilantro, avocado, and delicious shrimp!
You can add fish to my Salmon Spaghetti Carbonara, and keep it in the freezer for weeknight meals or last-minute guests. My friend, Lori, used the same salmon and made delicious Salmon Wellington. Great for entertaining or camping or a weeknight meal.
How to make Shrimp Scampi Taco Bites
Start with pre-baked fillo cups. I love these little bites for easy appetizers.
Open a pack of Shrimp Scampi—cook and cool.
Fill the cups with fresh picco de gallo.
Prepare other fresh ingredients, like chunks of pineapple and avocado. Pull whole leaves off a cilantro bunch.
After the cups are full, place a shrimp on top! Serve and enjoy!

Shrimp Scampi Taco Bites
Ingredients
- 1/2 cup pico de gallo salsa, drained
- 1/3 fresh pineapple, cut into small, 1/4 inch thick triangles
- 1 avocado cut into small, 1/4 inch thick pieces
- 1 16 oz box Gorton’s Simply Bake Shrimp Classic Scampi
- 2 boxes Athens mini fillo shells
- Cilantro and lime to garnish
Instructions
- Bake shrimp scampi according to package directions. Set aside to cool.
- Fill each fillo cup with a teaspoon of pico de gallo, then place a small piece of pineapple, a small slice of avocado, and one shrimp on top.
- Garnish each cup with cilantro and a squeeze of fresh lime. Serve immediately!
