Summer Berry Almond Spinach Salad
A salad every day. Yup, those words are true in our little cozy mountain home. My hubby and I do enjoy a salad every day. With so many options of salads, right now one of our favorites is this Summer Berry Almond Spinach Salad, full of so much color and flavors!

Ingredients for this spinach salad:
- Grapefruit
- Strawberries, blueberries, blackberries
- Mini bell peppers, Persian cucumber
- Toasted almonds
- Spinach or spring mix
Balsamic Dressing ingredients:
- Olive oil
- Balsamic vinegar
- Ground mustard, garlic powder, dried thyme
- Kosher salt
Floating the Deschutes
Last week, with our first canoe float on the Deschutes River, we were back in no time to enjoy this summer berry green salad for dinner with hot, crunchy bread and a glass of wine. Perfection.

Paul and I spend a lot of time together, especially since we both work from home. That’s a lot of time together, actually. The number one thing we do for our marriage is invest. We invest by doing things for each other, and spending quality time together, and then doing things for other people together.
Our love story of almost 30 years began in our home, and it continues to this day. Our relationship with each other comes first, and is way more important than other friendships.
Importance of mentorship
In a world that is sort of messed up, Paul and I are all for recommending counselors for couples who are struggling. We’re also willing to invest our time in helping friends dig through the weeds. I think there is a huge lack of help between generations now, where the older come alongside the younger. We call this mentorship, and Paul and I see less and less of it.
The older we get, our lives can be examples for the younger generation. That could be a lot of pressure, but we don’t look at it that way. We put our selfishness aside and look for ways to help others be brave, learn, and grow in their marriages. Even though life is messy and raw, and we may feel ill equipped for the what we’re called to do, but we still invest.
Relationships will never be better if we don’t take the time, listen to each other, earn respect from one another, and spend regular, carved-out time with each other.

Summer Berry Almond Spinach Salad
Ingredients
- 1 grapefruit, cut into slices
- 2/3 cup sliced strawberries
- 1/2 cup fresh blueberries
- 1/2 cup blackberries, sliced in half
- 2/3 cup mini bell peppers, sliced
- 2/3 cup Persian cucumber, sliced
- 1/2 cup toasted almonds, chopped
- 3-4 large handfuls of spinach or spring mix
- Balsamic Dressing:
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- 1/2 tsp ground mustard
- 1/4 tsp garlic powder
- 1/4 tsp dried thyme
- Pinch of kosher salt
Instructions
- In small bowl, combine all ingredients for dressing, and whisk together. Set aside.
- In large salad bowl, spread out spinach, layer the fruits and veggies on top, then sprinkle with almonds.
- Drizzle dressing on top, toss the greens, and serve fresh and cold!
