Chicken Salad Board
Make your own Chicken Salad Board with your favorite bread (croissants) and toppings, and our delicious, easy chicken salad sandwich recipe!
I love preparing a recipe of my favorite chicken salad, with leftover chicken breasts from dinner the night before. It’s a great snack for a quick bite (with a cracker), or a half sandwich for lunch. Or, better yet, it’s fun to serve on a Chicken Salad Board. You may have already tried our Chicken Caesar Salad in a Jar Board (so fun for a picnic).

Chicken Salad Board

Ingredients for making a Chicken Salad Sandwich Board
- Cooked chicken breasts
- Mayonnaise
- Pickles (we love sweet pickles!)
- Lemon
- Salt and pepper
- Romaine lettuce leaves
- Bread of your choice (we used croissants)
- Roasted asparagus
- Roasted grapes
- Your choice of other snacks, like olives, pickles, cheese, veggies, crackers
Variations and substitutions:
Use canned tuna fish or leftover salmon in place of the chicken.
Add grapes, pineapple, or nuts to the chicken mixture.
Mix up the breads to use whole wheat, Hawaiian rolls, homemade biscuits, or even tortillas (to make tortilla chicken salad wraps).
Add curry to spice up the chicken salad.

Tips for making chicken salad:
- Combine the chicken and mayo in a mixer and mix until smooth and spreadable.
- Add in the pickles along with the lemon juice, and add salt and pepper to taste; mix some more.
- Keep tasting the chicken salad until you get the lemon, salt and pepper just right.
How to make a Chicken Salad Board:
Place the chicken salad in a bowl and set on a board.
Serve with crisp romaine lettuce leaves, bread and extra mayo, for people to make their own sandwiches.
Add Roasted Asparagus and Roasted Grapes, and other snacks to the board to round out the party at your table.

Chicken Salad Board
Ingredients
- 2 cooked chicken breasts
- ¾ cup mayonnaise
- ¼ cup pickles, chopped (we love sweet pickles!)

- Roasted grapes

Instructions
- In a mixer, combine the chicken and mayo until smooth and spreadable. Mix in the pickles along with the lemon juice, and salt and pepper to taste.
