I’m a pickle lover! Whether it be a dill pickle salad, or a fried onion pickle dip (so good), we really love this new deconstructed cream cheese spread. It’s tangy, creamy, and so good (you can even try sweet pickles!) This Cream Cheese (with pickles) is a creamy and refreshing spread for so many applications.

This versatile spread is perfect for bagels, sandwiches, or even on an Epic Pickle Board. It’s really great for spring and summer parties, and game day events.

Why I love a cream cheese spread

  • Deconstruct it on a cutting board, chop and serve!
  • Fun presentation for a party.
  • You can make aheaad and keep in the ridge for a spread on sandwiches or bagels.

Gather these ingredients

  • Cream cheese: Regular or light works!
  • Kosher dill spears: Buy high quality pickles. We buy at Costco, and love Grillos Pickle Spears.
  • Dill pickle chips: Also try to buy high quality. The better the pickle, the better the dip.
  • Fresh dill: If you don’t have fresh, add a sprinkle of dried dill. 
  • Red onion
  • Garlic powder: You can use 1-2 cloves of fresh, but it will be more zippier.
  • Kosher salt: Or use flake salt.
  • Few cracks of fresh black pepper
  • Pita chips or butter crackers or favorite sturdy chips.

How do you make the spread

  • Deconstructed: Place a block of cream cheese on cutting board, with the pickles laid on top, fresh dill, and then red onions.
  • Chop: Start chopping with a large sharp knife, until slightly mixed together.
  • Scrape it into a small mixing bowl. Sprinkle the ingredients with the garlic powder and the salt. Add a few cracks of black pepper.
  • Mix – It doesn’t have to be mixed all the way through – chunks are okay!

Tips and substitutions:

  • Make sure the cream cheese is on the softer side (but easy to cut with a knife).
  • Replace the dill for basil (for summer months). It’s just as good.
  • I love to use my mandolin to cut the red onions (quick and easy).
  • Sprinkle with “everything but the bagel” seasoning, or your favorite seasoning.
  • We also love Trader Joe’s “Green Goddess” seasoning.
  • What are sturdy chips? The chips you serve need to be sturdy, which means they are thicker and they hold up well to dips. You can also buy sturdy potato chips. We love to set out a knife where guests can “spread” the dip on pita wedges.

Serving

  • This is a great appetizer for Super Bowl Sunday! It only takes a few seconds to lay the ingredients out on a cutting board. Take a knife and start chopping. Optional to serve right on the cuttiing board (with a spreader tool), or you can scrape it into a dish.
  • Place in a small bowl on a dinner plate, and then surround with pita chips or butter crackers or favorite sturdy chips.
  • Or serve with pita wedges, on sandwiches, bagels, wraps, as a dip with veggie sticks and cucumber thick slices.
  • For game day, set it out with other charcuterie items for the perfect snack. We love these cuban sliders, this chili, and these banana bites for dessert!

  • 2 Kosher dill spears, we buy at Costco
  • 6 dill pickle chips
  • Fresh dill
  • 3 slices red onion, sliced very very thin
  • 1 teaspoon garlic powder
  • 1 teaspoon Kosher salt
  • Few cracks of fresh black pepper
  • 1-2 packages of pita chips or butter crackers or favorite sturdy chips

  • Use a sharp knife to start chopping all the ingredients, until slightly mixed together.
  • Scrape it into a small mixing bowl. Sprinkle the ingredients with the garlic powder and the salt. Add a few cracks of black pepper.
