Wedge Salad Charcuterie Board

Grab a board, platter, or tray and start slicing and preparing the food for this yummy salad board!

  • Arrange the wedges on the tray and place the foods in between.
  • Add your favorite dressing in the center.
  • A great salad board for a luncheon or small party!

Ingredients for a Shrimp Wedge Salad Charcuterie Board

  • Small cooked shrimp
  • Thousand Island Dressing – you can make your own, here.
  • Iceberg lettuce
  • Soft cooked eggs (perfect soft boiled egg recipe)
  • Roma tomatoes
  • Cooked bacon
  • Feta cheese
  • Red onion
  • Parsley for garnish
  • Fresh black cracked pepper
  • Favorite crackers (have you tried Effie’s Homemade Oat Cakes?)
  • Sliced cheese
  • Sliced Salami

One of the things I’ve been doing every day is walking. Even on vacation I walk, walk, walk. I track my miles with my iWatch and I love walking in new places!

I think we get in ruts doing the same thing, walking the same walks, inviting the same people to dinner.

We even forget to try new recipes, or even new ways to host. I’ve very much been into serving boards for dinner (are you surprised?), and it’s been so fun.

Like a new season of hosting for me.

Shrimp Wedge Salad Charcuterie Board

Ingredients
 

  • 1 ½ cups baby cooked shrimp, rinsed and drained
  • Thousand Island Dressing, homemade or store bought
  • 1 ½ heads Iceberg lettuce, quartered (use 6 for serving 6, or 8 for serving 8)
  • 4 Soft cooked eggs, perfect soft boiled egg recipe, sliced
  • 3 Roma tomatoes, quartered
  • 10 slices cooked bacon, crumbled
  • 1 cup Feta cheese
  • 1 small red onion, thinly sliced
  • Parsley for garnish
  • Fresh black cracked pepper
  • 1 box Effie's Homemade Oatcakes
  • Sliced cheese
  • Sliced Salami

Instructions
 

  • On an 18-inch tray prepared tray (either parchment paper, or food approved tray), place a bowl of thousand island dressing in the center.
  • Around the bowl of dressing place cheese, salami, and favorite crackers.
  • On the outside, place the wedges of Iceberg lettuce, shrimp, bacon, onion, tomatoes, eggs, and feta cheese.
  • Garnish with parsley. Add fresh cracked pepper to the dressing and serve!
