Being a seasoned hostess, I’ve learned that hosting a dinner party is an opportunity for bringing people together to create togetherness. This Easter dinner, where we served Strawberry Quinoa Salad with Fresh Basil, happened four years ago at our last home in Medford, Oregon.
Strawberry Quinoa Salad
In our backyard with family and friends, we served a traditonal Easter dinner of ham, potatoes (love these Potato Gratin Muffin Stacks), lots of salads, and plenty of desserts. Desserts like this 5-ingredient Frozen Strawberry Royale, and No Bake Chocolate Easter Egg Cookies!

There’s nothing quite like strawberries and fresh basil that says “summer!”
Ingredients for strawberry quinoa salad
- Fresh basil, finely chopped
- Lime juice
- Agave nectar or honey
- Sea salt
- Olive oil
- Cooked quinoa
- Sliced strawberries
- Red onion, cucumber, carrots, bell peppers
Summer salad recipe
A delicious summer salad, the dressing is so simple. Olive oil, lime juice, honey, and fresh basil.
Mix together! Make the salad ahead and toss right before serving!

I think about what food means to us – as a society, as friends and family, and as a community, and how the nourishment of it changes our lives. I’m sure you have your own stories of sharing food and recipes with others in your home.

What makes me sad is that to many, dinner parties or eating together only center around a holiday meal (or birthday celebration).
I wish we didn’t always have a “reason” to host a dinner party!

Set the table
For this outdoor Easter dinner, we set a very simple table with springy flowers, my favorite Le Creuset dishes, Mason green and blue jars for glasses, and IKEA purple napkins.
The day couldn’t have been better.
The food was delicious, the weather was absolutely gorgeous, we mingled, savored our time together, and I will admit, it was hard to say goodbye.

Strawberry Quinoa Salad with Fresh Basil
Ingredients
- ¼ cup basil, finely chopped
- ¼ cup lime juice
- 1 tsp. agave nectar or honey
- 1 tsp. sea salt
- ½ cup olive oil
- 2 cups cooked quinoa
- 1 cup sliced strawberries
- ½ cup red onion, finely chopped
- ½ cup cucumber, finely chopped
- ¼ cup diced carrots, finely chopped
- ¼ cup red or yellow peppers, finely chopped
- ¼ cup chopped basil, finely chopped
Instructions
- Mix the first 5 ingredients in a bowl; set aside.
- Add the other ingredients together in a larger bowl.
- Mix in the dressing. Serve!
It looks like a great holiday celebration.

I love potlucks. It’s how we always do family gatherings, and since we’re looking to feed 40+, it’s really helpful in getting rid of some of the burden of cooking for and hosting that many people. Looks like you had a wonderful time!
