This is a great casserole dish if you’re looking for an easy weeknight dinner, or a Cinco de Mayo recipe!
What I also love about a good tortilla pie recipe is you can make it your own. Make it in whatever size pan you choose (a pie plate works, too!) Add in rice and beans (for vegetarian), or leave out the olives, add a ton of fresh cilantro, salsa between the layers. Go for it! :)
All you need are these ingredients:
- Corn tortillas
- Shredded chicken (I use rotisserie)
- Chopped green chiles
- Salsa
- Sour cream + extra for topping
- Monterey Jack cheese (or Mexican blend)
- Fresh cilantro
- Fresh tomatoes
How do you make easy taco pie
- Layer 4 tortillas, cup chicken, green chiles, salsa, cup sour cream, and cheese. Then repeat the layers.
- Top with remaining tortillas, salsa, and cheese.
- Then you bake until top is browned and bubbling, 30 to 40 minutes.
- Garnish with sour cream, fresh cilantro, and chopped fresh tomatoes.

Tortilla Chicken Pie
Years ago, when my kids were in high school, this was one of our favorite go-to recipes, quick and easy, when they returned home from soccer practice.
Taco Pie is yummy and goes well served with Homemade Refried Pinto Beans, and these little cookie bites for dessert: Raspberry Lemon Cream Galettes.
Rotisserie chickens come in handy. You can even freeze the chicken and cheese, to make sure you have the ingredients on hand.
Oh, and this is even better if you can use dark meat (a bit richer), like chicken thigh meat. Or, you could even use ground beef or ground turkey, or shredded pork. Try my 2-ingredients Crock Pot Pork Verde recipe for this casserole dish.
Very simple ingredients, and the topping is always the best part, right?
Sour cream, fresh tomatoes and cilantro, and possibly a few drops of tabasco.
Layer, stack, and serve!

Ingredients
- 12 corn tortillas, 6-inch
- 2 ½ cups cooked, shredded chicken (I use rotisserie)
- 1 8 oz can chopped green chiles
- 2 cups salsa
- 1 ½ cups sour cream + extra for topping
- 3 cups Monterey Jack cheese, shredded, or a Mexican cheese blend

Instructions
- Preheat oven to 375 degrees. In an 8-inch square baking dish, layer 4 tortillas, 3/4 cup chicken, green chiles, salsa, cup sour cream, and cheese; repeat layers.
- Top with remaining tortillas, salsa, and cheese. Bake until top is browned and bubbling, 30 to 40 minutes.
- Garnish with sour cream, fresh cilantro, and chopped fresh tomatoes.

I make something very similar to this however I bake it in a spring form pan and slice it up like pie. Yours looks delish!
