Ingredients needed to make poppyseed dressing

  • Sour cream: For the creamy base of the dressing. It adds a bit of tang that balances well with the sweet maple syrup.
  • Maple syrup: Sweetens and thickens the dressing. You can use honey instead, if you prefer.
  • Lemon or orange zest: Brightens the salad dressing and adds an extra punch of citrus flavor on top of the fresh lemon (or orange) juice.
  • Fresh lemon or orange juice: Another key liquid for the dressing, adding the right amount of acidity to counter the sweetness from the syrup and fresh fruit.
  • Poppy seeds: Adds distinct, delicate flavor that is nutty, earthy, and slightly sweet with a subtle hint of spice. They also provide a gentle crunch.
  • Fresh fruit: Already cut into bite sized pieces. You can use oranges, apples, grapes, or strawberries.

Sandy’s tips and substitutions:

  • Storage: Store any leftover fruit salad with poppyseed dressing in an airtight container in the fridge for up to 3 days. You can also store leftover dressing in a glass jar in the fridge for up to a week. I prefer to keep my homemade dressings in mason jars, but any sealable jar or airtight container will work. Bring the chilled dressing to room temperature and give it a good shake or whisk before using again.
  • Make ahead: It’s easy to make the dressing ahead of time and store it in the fridge. I recommend only preparing the fresh fruit salad just before serving for the best texture.
  • Double the recipe: Make a double batch of this salad when serving a larger crowd – perfect for those larger family gatherings over spring and summer!
  • Uniform size matters: Cut the assorted fruit into even bite-sized pieces. It makes the salad look more appealing and ensures every bite includes a perfect mix of flavors and textures.
  • Types of fruit to use: Fresh fruits of the season, like apples, apricots, bananas, cantaloupe, figs, guavas, grapes, honeydew, and ripe kiwi fruit are all great. Don’t forget strawberries (any berries), mangoes, melons, nectarines, papayas, peaches, pears, oranges, and pineapple. I love to use Granny Smith apples because you get a little tartness with the sweetness.
  • Slow down browning: What do you add to a fruit salad to keep the fruit from turning brown? Citric Acid! It’s easy, just drizzle over the fruit (before adding the dressing) a little lime or lemon juice!
  • Be gentle with tossing the salad: When tossing the salad with the dressing, be careful that you don’t break up any of the softer varieties of fruit used. You don’t want to end up with a mushy, wet texture from being too heavy-handed. Your salad is also more visually appealing when the fruit pieces remain intact.

Variations:

  • Creamy base: Replace the sour cream with an equal amount of plain full-fat yogurt. This will add tanginess, protein, and a thicker, creamier texture. For a thicker texture, add 2 tablespoons of mascarpone cheese or cream cheese (softened) to the sour cream base.
  • Lighter, no-cream dressing: For a vinaigrette-style dressing, whisk together 3 tablespoons of olive oil, 2 tablespoons of lemon juice, 1 tablespoon of maple syrup, 1 teaspoon of poppy seeds, and a pinch of salt.
  • Spiced poppyseed dressing: Add ⅛ teaspoon of cardamom or cinnamon. Cardamom, in particular, has a citrusy-spicy note that complements poppy seeds and orange zest exceptionally well.
  • Toasted poppyseed dressing: Before adding the poppy seeds, toast them in a dry skillet over medium heat for 1-2 minutes until fragrant. This intensifies their nutty, almost hazelnut-like flavor. Let them cool before stirring into the dressing.
  • Vanilla poppyseed dressing: Add vanilla extract or vanilla bean seeds to the dressing mixture. Vanilla pairs beautifully with maple, sour cream, and poppy seeds, creating a dessert-like dressing for fruit salads.
