Just in time for the weekend or Taco Tuesday, we’re sharing our very fun and delicious vegetarian Burrito Bowl Board! But don’t worry, just because it’s vegetarian doesn’t mean you can’t add your favorite protein. Think chicken, pork, fish, and beef! The beauty of the boards is you can make smaller servings (4), or you can double and serve on the bigger board for more servings!

With the cost of meat so high, we’re on a roll to start eating more plant-based meals. You too? So serving a veggie meal, or this Veggie Burrito Board, is the perfect meal. You can opt to serve on a board, bar, or however you choose.

Make your own homemade recipes
Beans are a budget (and mouth) friendly protein to make. Warm and full of earthy spices and citrus, my stovetop Cuban-inspired black beans are the star of this board. If you don’t have time to make beans from scratch, use canned black beans! Saucy beans, a simple pot of rice, bright pico de gallo and pickled red onion, crunchy cabbage, creamy avocado, and salty tortilla chips, make serving a meatless meal a breeze.

Let’s get started. Gather these ingredients for a delicious Vegetarian Burrito Bowl Board.
- Make my Stovetop Cuban Black Beans, or you can use canned black beans (though not as good)
- Cilantro Lime Coconut Water Rice (or brown or white rice)
- Red cabbage
- Pico de gallo salsa
- Pickled red onions
- Avocados
- Radish
- Cotija cheese
- Cilantro to garnish
- White corn tortilla chips
How do you make a Veggie Burrito Bowl?
- Make ahead black beans and rice recipes. Keep warm until ready to serve.
- On a big board, place bowls of red onions, salsa, rice, cheese, and beans.
- Arrange on the board shredded red cabbage (or favorite lettuce or cabbage), chips, fresh cilantro, radish, and avocados.
- Serve on the side your favorite guacamole, dressings, or any other toppings!
- Everyone fills their own bowl to make their own salad bowl!
What do you serve with the burrito bowls?
These burrito bowls are very healthy and well-balanced, with protein, carbs and healthy fats. You can always make them lower-carb and use Cilantro Lime Cauliflower Rice (from my friend at Wholesome Yum). You can also add in more carbs and add fresh corn, or this Grilled Corn Pineapple Salad. Serve fresh toppings and make your own salsa and guacamole.

Ingredients
- 1 ½ cups Stovetop Cuban Black Beans, or other protein, or plain black beans
- 4 servings rice
- ¼ red cabbage, finely shredded
- 1 c pico de gallo salsa

- 2 avocados, peeled, sliced, covered in lime juice to prevent browning
- 2 radishes, finely sliced
