Sandy’s tips for chicken thigh recipes:

  • Storage: Leftover chicken thighs typically keep well in an airtight container in the refrigerator for up to 5 days, irrespective of the recipe you follow. 
  • Freeze: Once cooled, you can place your chicken thighs in portions into airtight containers and freeze for up to 2–3 months.
  • Reheat: Reheat your chicken thighs in a skillet with a splash of water to loosen any sauce or in the oven, covered with foil to prevent the juicy meat from drying out.
  • Make ahead: If the recipe calls for a marinade, you can easily marinate the chicken thighs in the fridge for 12-24 hours but avoid going beyond this. 
  • Turn marinade into sauce: You can take a marinade and make a sauce from it to drizzle over the chicken thighs when serving. NOTE: It must be boiled for 5 minutes first to destroy any harmful bacteria.

  • Different cuts of chicken: Most chicken thigh recipes will allow you to substitute with chicken breasts or tenderloins. For bone-in chicken thighs, make sure to increase the initial cooking time.
  • Searing chicken thighs: This is a great technique when cooking with skin-on chicken thighs. Searing the thighs until golden (not fully cooked) in a heated skillet will help to lock in flavorful juices and also adds color to the chicken pieces. 
  • Pat dry: Make sure to remove excess moisture from chicken thighs before seasoning for better browning.
  • Test for doneness: Chicken is safe to eat when a meat thermometer reads an internal temperature of 165°F.
  • Allow to rest: Let cooked chicken thighs rest for 5 minutes before serving. It allows the savory juices to settle back into the meat, ensuring every bite stays moist and flavorful.
  • For oven baking: Use a sheet pan with raised sides so that the chicken thigh cooking juices are contained, or you can use a roasting pan. Lining the pan with foil is optional, although I like it as it assists with the cleanup.
